Rarely does a geographic area have such a strong link with a product as the Upper Vastese does with ventricina. In the past, the cured meat was prepared with pork from black or red pigs, but these days the more common white pigs are used. Once the animal has been slaughtered, the finest cuts (thighs, loin, shoulder) are set aside and carefully deboned and trimmed, removing the hardest, most fibrous parts (those adhering to the bones), then cut into small pieces of 2 or 3 centimeters across. These are left to rest overnight, then seasoned with salt and mild ground chili pepper in equal quantities, and sometimes with wild fennel and a sprinkling of pepper. The chili comes from small, sweet, red peppers from Altino, which are dried for a few days before being selected, opened, cleaned and crushed in a mortar.

Stable meadows, on the other hand, are natural and rich in dozens of different grasses, as many as a hundred in the high mountains.
They still need human labor: they must be tended, mowed or grazed. But their best protectors are the four-legged animals: cattle, sheep, goats and insects: bees, butterflies, wasps, ladybugs...

The town of Fara Filiorum Petri has a long history, as evidenced by its name of Longobard origin, meaning “land of the sons of Peter.” Located in the heart of Abruzzo, at the edge of the Majella Park, the municipality is crossed by three rivers. One is the Foro, which gives its name to the Foro Valley; Fara Filiorum Petri is the valley’s main center. Over the centuries, a white onion became closely tied to the town and its identity as well as an important resource for the local economy, celebrated with a festival on the first weekend in August.
Also known as piattona (from piatto, “flat”), the Fara Filiorum Petri white onion has a flattened shape and a sweet, aromatic flavor. Back in the 14th century the monks from the local Sant’Eufemia monastery grew an onion with an unusual shape and flavor. Over time, the variety adapted perfectly to the local clayey soils, to the point that Fara’s farmers used to be known as cipollari (after cipolla, “onion”).

Few people have heard of Montonico, but the grape variety has a long, significant history. One source dating back to 1615, from the Catasto Onciario, shows the existence of a variety with that name that was being grown around Bisenti, near Teramo. Numerous other sources since then have also referred to it as a very productive and quality variety. Over the centuries it has represented an important source of livelihood and income for the population of this poor mountainous area on the slopes of Gran Sasso.

As many as 300 forage essences have been surveyed on the Gran Sasso pastures, compared to 20, 30 in the Alps. This exceptional variety and the dry climate of the higher altitudes have favored sheep breeding and transhumance from other regions over the centuries: from the Tavoliere of Puglia, the Agro Romano, the Maremma or Terra di Lavoro, in the Casertano area. The culture of transhumance and related dairy production belongs to the history of Abruzzo, but it is in the area of the Gran Sasso and Monti della Laga National Park that the pastoral destination par excellence is located. Canestrato is produced year-round. The Presidium protocol stipulates a minimum maturing time of 2 months for 1-2 kg forms, 8 months for the 5 kg forms and 15 months for the traditional 15 kg forms.

Liver sausage, known locally as cicolana, is typical of the province of L’Aquila and one of the fruits of this long-standing tradition. It is made with pork liver, heart and tongue, with the addition of some lean and fat pork meat. Two types of sausage are traditionally made, both between November and April. In the classic recipe, the meat is flavored with pepper, chili and garlic, while the sweet version includes honey for a more refined flavor.

The Tavo river is located in Abruzzo, it originates from the Apennine peak of Gran Sasso. It flows in the hilly areas between lush valleys. The soils of these areas – which are alluvial and made up of predominately sand and pebbles – have proved to be excellent for the cultivation of a specific variety of legume, which takes its name from the river and its spherical shape, the Tavo round bean. It is a rustic variety, that is capable of resisting the particular climate of this area: from one side the great massifs of Maiella and Gran Sasso provide shelter from the westerly winds, however the air currents from the south-west blow freely, including in particular the Garbino, a hot wind that can reach up to 100 km per hour, while the cold winds which originate in Siberia arrive from the north-east.
