Dry Rancio-usually made from grenache or maccabeu vines, the same ones used to make the sweet wines Banyuls, Maury, Rivesaltes-has centuries of history and bears witness to the traditional winemaking culture of Roussillon: this was the wine of Banyuls before the regulatory changes on alcohol in natural sweet wines.Rancio is very far from the modern concept of wine, the one typical of northern regions. It is not for meals, and consumers, with the exception of those in Roussillon and the Catalans, are not accustomed to it.
